Turkey Stuffed Peppers with Tomato Basil Sauce

I am so ready for the fall that I can barely stand it. I am ready for some much cooler weather to come down to Texas, and I am looking forward to start watching some college football. I love my meatloaf, and I use a very similar recipe for my stuffed bell peppers, they remind me of comfort food and cool weather or wintery meals. I occasionally make them during the summer but they are so much better with some mashed ‘taters when it is cool outside. However, I have tried to make the ones I eat these days much healthier and I do not eat them with the mashed potatoes anymore either, but they would still go very well with them. I know there are tons of recipes out there I make these all the time and you can modify it however you want to. You could add some corn and black beans and substitute the basil for cilantro and add some cumin, and change out the oregano for Mexican Oregano. There is no wrong way if it tastes GOOD!

Ingredients Needed:
4-6 medium size bell peppers, you choose the color
1 29-ounce can of tomato sauce
1 pound ground turkey breast
1 cup or oatmeal uncooked
2 eggs
1 can of tomato paste
1/2 cup Mozzarella cheese
1/4 cup of Parmesan grated
3/4 onion, sweet chopped
1/2 cup chopped fresh basil chopped fine
5-6 garlic cloves, minced
2-3 tablespoon canola or coconut oil
1 T of Worcestershire
1/2 T of balsamic vinegar
1 tsp of garlic powder
1 tsp of dried oregano
1 tsp of sugar
salt and pepper to taste

Directions: Wash your 4-6 peppers and cut the tops off of them and core them out, and save if you want for presentation or to bake on top, or toss out. I have done both…You get to choose. I break my eggs and whisk them until very frothy and set aside. I get a large mixing bowl and I add the turkey, oatmeal, tomato paste, 1/2 cup of onion, 1 T of oil, Worcestershire and garlic powder and give it a hand mix until somewhat incorporated. I then add the egg and get it mixed well. Preheat your oven at this point to about 375. You will then stuff your peppers and when the oven is preheated you will add them and cook until done. Turkey takes longer to cook than beef or chicken so you want to make sure that it gets to at least 160-165 degrees. I would say a minimum of at least 40 minutes + up to an hour depending on your oven. While you are waiting on the peppers to cook you can make your sauce. You can always use a store bought marinara if you wish, I prefer to make my own.

Sauce: take a sauce pan and turn on medium low heat, add 1-2 T oil, and the add the last of your onion which should be about 1/4 cup, cook until translucent, and add the minced garlic 5-6 cloves. When you smell the garlic you are ready to add the tomato sauce and the balsamic vinegar. Cook until you get it to a slow simmer. Add salt and pepper to taste, add the Parmesan cheese, fresh basil, dried oregano and sugar. You can make this sauce ahead of time it is always better the next day. Keep on a low heat so you do not burn, and stir a few times.

When the peppers are cooked all the way add the mozzarella cheese to the top and let it melt on. You will plate it up and add the sauce to it. You can always eat it with some taters if you so desire!

Korean Bulgogi Marinade by Chef Shelley Pogue

I have worked on this recipe off and on for the last 4-5 years and I have several different versions of this recipe. I have used ABC Kekap and more chili and also some lime juice from time to time, it just depends on how I feel at the moment I guess. I was working on this recipe for my full-time job as an R&D Chef, as well as for the clients that I cook for with my personal chef services on a weekly basis. This is a great marinade and you can modify it anyway you like it. I use fresh ginger because I think it gives it a something extra when you grill/sauté and get that caramelized ginger bite.

I suggest following the recipe and after you whisk it then adjust to your tastes, I do that all the time. And cooking to me is definitely all about fun and all about the taste!

2- 2.5 lbs. of thinly sliced rib-eye cut across grain you can have your butcher trim them and then slice them for you 1/4″ thickness or smaller
1 cup of soy sauce
4 T brown sugar
2 T sesame oil
4-5 cloves of garlic, minced
1/4 of a medium sweet onion, fajitas style slices
3-4 green onions very small diced until you get to the white part
3 T toasted sesame seeds
1 T sriracha chili paste
1 t of fresh ginger, finely minced
1/2 t of red pepper flakes you can add less if you do not like the heat

Instructions: Whisk all the ingredients together in a bowl except for the beef. When the sugar has dissolved, add beef and make sure you get all pieces coated. Cover and refrigerate for a minimum of 1 hour, I have forgot and left it in the fridge over night and it was okay. You can pan fry if you like just make sure to use a hot pan to get it a little crispy. The sugars will help caramelize the meat. I have used a George Forman grill and I have also grilled them out over charcoal. That is the reason I get them cut into at least 1/4″ pieces if I decide to grill them.

If you have a dehydrator I have used that too it makes great beef jerky. I sent some to my brother when he was stationed in Iraq with and oxygen absorber in the bag. Regardless of how you cook this the flavors are really great and you will probably cook multiple times and/or modify it because you do not like the heat, onions or ginger. Have fun with it 🙂

I have been asked again and again about this post so I wanted to Re-Post it. I guess it is really good information and Solo Sups can be used for so many different things from drinking out of them, using them to paint with, etc…. Toby Keith had no idea what he was doing when he came up with the song Red Solo Cup. He made the cup oh so popular and then of course it was cool to have one in hand. I came across some good info and wanted to share it with everyone else because it just might come in real handy!

“Red Solo Measuring Cup”. I guess this will come in very useful with Graduation parties etc. If you are having a get together for any size group and do not want to do the dishes you will more than likely use a Solo cup. What most people do not know is that you can actually use this cup and it has forms of measurements that can be used for many different drinks. Enjoy…Cheers

Most people are watching their dollars and working off a budget to make ends meet. Many are also now looking for natural alternatives to live a more wholesome and chemical free life. The following are a few ways in which you can have both of the above. These uses are becoming more prevalent and are easy to do it yourself. So, here are great easy uses for common household items to make your life more chemical free and your wallet a little fatter. I got these from Facebook and not certain about 100% of them but I do know most of them do work.

1) Toothpaste: Buff a CD/DVD
Apply toothpaste to a cotton ball and wipe the disc. Wash with water afterwards and you’ve got a brand new disc!

2) Cornstarch: Untangle Knots
Sprinkling cornstarch into tough knots, such as shoe laces helps loosen them.

3) Walnut: Buff Dings out of Wood Furniture
Get rid of unsightly scratches and dings on wood furniture by rubbing a walnut on the areas. The blemishes will vanish quickly and your furniture and pocket book will be saved.

4) Club Soda: Make Your Breads Fluffier
When baking, where recipes call for water, add club soda instead to make pancakes, waffles and any other breads fluffier.

5) Salt: Keep Windows Frost Free
Pour a cup of salt into a liter of water. Sponge the liquid onto the inside of window to prevent frost from forming during the winter months.

6) Rubbing Alcohol: Remove Permanent Marker
Dab the surface that has the permanent marker on it with a cloth or cotton ball covered in rubbing alcohol to make it disappear quickly.

7) Carmex: Stops Bleeding When Nicked Shaving
Cut yourself shaving? Just swipe some chap stick over the cut to stop that constant bleeding. No more tissue squares!

8) Apple Juice: Removes Dandruff
Don’t ask how it works, but it does! Instead of buying a special shampoo, just wash your hair in apple juice to rid your scalp of pesky dandruff.

9) Aspirin: Get Rid of Armpit Stains on T-Shirts
Grind up an aspirin tablet or two, then make a paste out of it using water, lemon or vinegar. Spread the paste on the stained area and let sit for an hour before washing.

10) Olive Oil: Make Pets’ Coat Shinier
Add a bit of olive oil to your pet’s food to give them a healthier, shinier coat of fur.

11) Newspapers: Clean Windows and Mirrors
Instead of using a spray and a streaky cloth, use only newspaper to clean off your mirrors and windows for a streak-free finish.

12) Baking Soda: Remove Bugs from Windshield
Mix baking soda with warm water to make a paste. Spread the paste over your windshield for fifteen minutes. Then wipe or spray off with a hose.

13) Bleach: Extend Life of Flowers in Vase
Add a few drops of bleach to vase water to prevent the build-up of the slime caused by bacteria. It works just like chlorine in a swimming pool.

14) Kitchen Dish Soap: Flea-Killing Dog Shampoo
Kitchen dish soap (not dish detergent) can double as dog shampoo for its flea killing abilities.

15) Coke: Remove Blood Stains from Clothing
Soak the stain in coke until the stain is dissolved, then wash the clothing as usual. Wash before the coke dries, though.

16) Honey: Remove Blemish Overnight
Have a blemish you need to get rid of by tomorrow? Put a dab of honey on the blemish and cover it up (it’s best to use a Band-Aid) and the honey’s natural antibacterial properties will clean out the bacteria by the morning.

17) Wax Paper: Clean Can Opener Gears
Run a few small strips of wax paper through the can opener to clean out of the bits and pieces that have built up in the gears throughout the year. The wax will also rub off on the gears to protect for future use as well.

18) WD-40: Remove Crayons from Walls
Use the lubricant and a cloth to remove stubborn crayon marks from the walls just by spraying the wall and wiping with a cloth.

19) Chalk: Keep Ants and Slugs Out of the House
Ants and Slugs Won’t Touch Chalk. So, simply draw a line in front of your doorway where you are having problems with these pesky critters and they won’t cross it, meaning they won’t be able to get into your house.

20) Vinegar: Kills Weeds and Helps Flowers Grow
Vinegar is a magic wonder when it comes to gardening. It not only kills weeds but they help flowers grow as well. Douse vinegar all around your garden to prevent weeds from popping up and to help your flowers to grow healthy and strong.

21) Mayonnaise: Remove Bumper Sticker
Spread mayonnaise on the bumper sticker and let sit for at least thirty minutes. Then, rub the sticker off with a towel, leaving a clean bumper!

22) Tin Foil Ball: Replace Dryer Sheets Permanently
Instead of using a dryer sheet ball up one or a few sheets of tin foil and toss it in the dryer. It removes the static electricity from your clothes and one can last up to a year.

23) Banana Peel: Polish Leather Shoes
Use the inside of a banana peel to give shoes a professional and natural shine that will last for quite some time.

24) Mouthwash: Cure Athlete’s Foot
Pour mouthwash on cotton balls and then swab your feet. The alcohol will disinfect the bacteria completely if you continue this for a week or so.

25) Baking Soda: Clean BBQ Grill
Mix a cup of baking soda with half a cup water to make a paste. Dip your brush into the paste and scrub the grill. The caked on pieces and black residue will come off much quicker and using baking soda is much safer and cheaper than using cleaning chemicals.

26) Coffee Grounds: Fertilizer
Coffee is full of nutrients and vitamins that are very beneficial to soil. That’s why some people include it in compost piles. If you want to get the most out of your coffee, pour the grounds on areas where you want more grass or flowers.

27) Olive Oil: Shaving Cream
The smoothness of the oil can replace the need for shaving cream, and it also provides great moisture.

28) Dryer Sheets: Gets Rid of Static Electricity
Use dryer sheets to remove static electricity from things such as clothing, TV screens or your own hair. Tame fly away strands by running a dryer sheet over them.

29) Freezer: Freeze Candles to Make Them Last Longer
Put candles in the freezer for at least 2 hours before using. Once you burn them, the wax will melt at a much slower pace, making them last much longer!

30) Two glasses of water: Cure Headache
Water is the cure to most common headaches. To make the headache go away quickly, drink two cups of water very quickly.

31) Lemons: Deodorize Garbage Disposal
Toss whole slices of lemon into the garbage disposal then run it. The acidity of the lemon will rid your sink of all odors and leave a fresh scent that usually lasts for a few months.

32) Alka Seltzer: Remove Burnt-On Grease and Food Stains
When letting your pots and pans soak, throw in one or two Alka Seltzer tablets and the caked on residue from cooking will come off easily when you scrub/wash.

33) Apple Cider Vinegar: Relieve Diarrhea
Mix two tablespoons of apple cider vinegar into eight ounces of water to soothe your stomach. The taste may not be the greatest, but the antibacterial properties of the vinegar will end the unpleasantness of the bowel problems.

34) Toothpaste: Remove Scratches from Glass
Apply toothpaste to scratch, then rub with a cloth until the scratch is gone. Make sure the glass is clean beforehand.

35) Cheerios: Relieve Pain from Poison Ivy, Chickenpox and Sunburns
Pound one to four cups of Cheerios into a powder and add to your bath to soothe your skin while you soak. You may not feel relief while in the tub, but you will soon after.

36) Buttons: Sort Earrings
Organize your earrings and prevent them from becoming entangled by using spare buttons as holders for each pair.

37) Corn Oil: Prevent Hairballs for Pets
Add a few drops of corn oil to your pets’ food to prevent hairballs from forming. The thick oil helps the fur pass through the animal’s system much quicker and easily.

38) Whipped Cream: Remove Gum from Hair
There are many remedies for removing gum from hair, but this is a lesser known one. Give it a try rather than peanut butter the next time you’re in need.

39) Coke: Remove Oil Stains from the Driveway
Oil stains are very difficult to remove pavement, but one method guaranteed to work is Coke. The highly acidic drink will eat away at the oil until clean.

40) Brown Sugar: Facial Scrub
A scrub is good to do about once a month to remove dead skin and bacteria built up in pores and remove excess oil from the skin. Brown sugar does just as well as expensive products and will definitely result in a clearer and smoother complexion.

41) Dryer Sheet: Lint Brush
You already know that dryer sheets remove lint in the dryer. Well, it can do the same thing out of the dryer, too. When you’re in a fix, use a dryer sheet. It works just as well as a lint brush, and if you like the scent, it’s an added bonus.

42) Newspaper: Deodorize food containers and Food Drawers in the Refrigerator
For that stinky Tupperware or smelly refrigerator drawer that is too much to deal with, toss in a sheet of newspaper overnight before you deal with it. The paper will absorb the smell greatly reducing it or eliminating it completely.

43) Olive Oil: Unstick a Zipper
The oil will help the zipper slide more easily, fixing the problem!

44) Salt: Cool Something Quickly
You know that feeling when you’re having a BBQ and someone asks for a drink and you realize that no one has put them in the cooler? There’s nothing worse than a warm drink on a hot day. Chill a drink quickly, by adding salt and water to your ice. The drinks will be cold in a matter of minutes; saving your party and making you look smart all at once.

45) Scotch Tape: Prevent Wall from Chipping When Nailing
The wall can leave unsightly chips when hammering in a nail. Prevent this by simply placing a piece of scotch tape over the area you’re going to nail. The wall will be held tighter, preventing chips from occurring.

46) Alka Seltzer: Soothe Insect Bites
Dissolve two tablets into a glass of water. Then use a cloth or cotton ball to apply it to the affected area. The red will go down and most importantly, the itchiness will vanish usually in fifteen minutes.

47) Lemon: Whitens Whites
Add about half a cup of lemon juice to your load of whites to makes them extra white. You can use lemon juice with bleach or detergent, so don’t worry about mixing chemicals with the acidic lemon.

48) Banana Peel: Whiten Teeth
This may sound a little odd, but rub the inside of a banana peel on your teeth twice a day for two weeks and you will receive the same effect from a teeth-whitening kit. Plus, you’ll save yourself money and the hassle of using chemicals.

49) Hair Dryer: Free Photos Stuck on Pages
If you have a photo stuck on a page that you can’t get free, try using a blow dryer on the back of the page. It will loosen the photo from the page and the adhesive holding it there.

50) Banana Peel: Heal Most Skin Problems
Bananas are the magical fruit, because they heal many common problems on the skin. By rubbing the peel on your skin, you can heal bruises and cuts and eliminate rashes, itching and warts. Basically if you have a common skin problem, it can be cured by this fruit.

Relajo Spice Recipe by Chef Shelley Pogue

If you like or love Salvadorian food you will need a spice mixture (Relajo) to season your poultry, beef or side dishes. I have seen a few recipes for these while developing different menus for catering events or private dinner parties but here is one that I have came up with for what my taste buds prefer, and I feel like I could serve my clients or friends.

Ingredients:
1 Dried Guajillo chile, stemmed and seeded
1 Ancho Chile, stemmed and seeded
2 T Sesame Seeds
2 T Pumpkin Seeds
1 T Almonds Raw
1 T Coarse Black Pepper
1 T Ground Achiote ( I find this @FiestaStores in Texas)
1 t Clove powder
1 t Dried Mexican Oregano
1 t Dried Thyme

Directions:
I toast the Sesame, Almonds and Pumpkin seeds separately and cool. After you stem and seed your Guajillo and the Ancho roast them in a skillet, and cool. You will then add all ingredients into a coffee grinder and pulse until you get a powder. If you store in a glass jar it should store for around 1-2 months.

I have used this in rice dishes and and on chicken and fish. You can add a little more pepper if you like or remove some of the clove if you are not much of a fan of it. I have made this recipe to fit my tastes and you might want to modify it to fit yours. I hope you enjoy this recipe.

Independence Day Horseradish Sauce Recipe

If you love eating Texas Barbeque, or any barbeque for that matter and want to try something a little different than the normal sauce, then this one is a must try! Every 4th of July is an event of hamburgers, hot dogs and the smoked barbeque brisket, along with apple pie, and then finish that off with some fireworks. It is a time for remembering our heritage, family gatherings, and enjoying the time off with the special people in our lives. I hope everyone remembers to thank a soldier if they run across one for the freedom they afford us on this special day. Happy Independence Day America!

I have created a horseradish sauce for some barbeque brisket that I think is pretty spectacular, and I wanted to share it with anyone wanting to do something a little out of the ordinary. I know most serve the traditional 4th of July meal with ketchup, mustard and/or even barbeque sauce. This just gives something extra to the holiday meal, and shows that you put a little more effort into it. It is a cold process sauce and can be made ready in all of about 5 minutes, Enjoy!!!

Ingredients:

2 cups of low fat yogurt

1 cup of mayonnaise not miracle whip, you can use low-fat if you wish. I had regular.

1/3 cup of Boars Head Horseradish

1 tsp of salt

1 tsp Dijon mustard

1 tsp sugar

1 tsp garlic powder

1/2 tsp thyme dry

1/2 tsp coarse black pepper

Directions: Add all ingredients to a bowl and whisk, add to serving dish and serve immediately or add to the fridge and chill until ready.

Turkey Meatloaf Recipe aka Mom’s Meatloaf

I just got a request on The Texas Food Network for a meatloaf recipe. I thought I would re-post this for anyone who might be interested in a good turkey meatloaf recipe.

I created this recipe a few years back and I really love this recipe. I called my mom Debby and wanted to know what went into her meatloaf because I loved it so much when I was a kid. I got an answer much like my Mamaw Gracie used to give me. Well I add a little of  this, and some of that ingredient, but if I don’t have that, I will add/use this instead…. All of the people that cook well in my family have there recipes that they use, and they are filed away in their head. I am trying to get mine out on my blog, or website, as well as a paper copy,  before I start to forget them. I have also had people ask me to do this so really sorry for the delay but I have been kinda busy ….with life

So, back to the recipe quagmire, as confusing as that was to figure out, I went off the main ingredients that my mom said that she used and I put my spin on it to make it a bit more healthy. I have learned that when you develop recipes for a living and they are mass produced you need to know the exact amount of each item. But, if you want to substitute bread crumbs for the saltine crackers, croutons, or oatmeal you can feel free to do so!  Right mom? I know that a few family members have tried it among quite a few others and they have all wanted the recipe. It is a good comfort food recipe, and going into the fall/winter months this is an easy fix for dinner. I hope that you enjoy this easy recipe as much as I do.

When I originally created this recipe I was using lean beef instead of lean turkey and I was using pork sausage instead of the turkey breakfast sausage I am now using. If you prefer beef by all means use it, I quit using it due to I was watching my caloric intake and wanted to see if it was as good with turkey and much to my surprise it is still a really good and easy recipe.

Recipe:
Turkey 2 pounds of lean 93/7 or you can use the 85/15
Turkey Breakfast Sausage 1 pound. If you can find this in the chubb/tube great if not you will need to buy breakfast links and remove skin.
Eggs 2 each
Milk 2 oz or 4 TBS I used to use 2% but I now use skim but you can use either
Sweet Onion 1 small or about 3 ounces
Green Bell Pepper 1 medium to large if you want to use less you can
Red Bell Pepper 1 large
Whole Wheat Saltines 4 ounces crushed
Tomato Paste 3 ounces
Better than Bouillon   2 1/2 Tablespoons of chicken, or if you ware using the beef instead of turkey for this recipe buy the beef base.  I provided a link to purchase if it is not available at your local grocery, it is not a must have but it is the best bouillon that I have used if you need it for soups, or any recipes that call for bouillon.  It is the best bouillon and that is what I use on a daily basis while developing recipes. It is made by Superior Products. If your local grocery is not carrying it they should, so you might want to suggest it.
Sugar 2 tsps you can omit if you do not want to add any sugar.
Garlic Powder 1-2 tsps
Black Pepper 1/2 tsp
Salt 1 tsp
Tomato Sauce 1/2 cup as a topping, you can use ketchup if you prefer

Preparation:
I take the eggs and the sugar and run them through a Cuisinart mini mixer, but you can use any mixer you like. You want to whip the eggs really well to get them to become elastic. This will act as a good binder when adding all the ingredients together. Some are probably wondering what the milk is for in the recipe but it makes it really moist. I have tried it with and without it and there is a difference.

Add all the ingredients to a mixing bowl and then mix together lightly. Add the eggs and mix them in with the rest of the ingredients. You do not want to over mix it will make the meatloaf really dense. Then you add the meat mixture to your loaf pan, muffin pan if you want to do a little portion controlling for yourself. If you have a set of scales you can portion them out 5-6 ounces and they will cook down to about 4-5 ounce portions.  I always use a little Pam to spray into the pan I am using so the meat loaf does not stick.

Cook on 350 for about 45-minutes to an hour, and check if you have a bio-thermometer to check the internal temp of the loaf it needs to get up to 160-165 degrees to make sure it is cooked completely. Depending on your oven temp it might take and hour + but you do want to make sure it is fully cooked.  If you are using the beef/pork version you want an internal temp of at least 155 degrees. Add the tomato sauce to the top and let it set for about 5-10 minutes or you can add it for the last few minutes in the oven to get it to caramelize a little bit. Once it has rested for about 10 minutes you should be ready to plate and serve.

If you want to you can also take this meatloaf recipe and use it to stuff bell peppers, it works really good in that application too, and the cooking time is almost the same. I am going to make this recipe and get it on video in the next few days or so. Do You Know Where Your Food Comes From?

I was born in the late 60’s and grew up in the 80’s. Many things have changed since the 80’s and especially in the way our food is produced. After WWII the way that food made it to our tables has changed greatly. My Great-Grandparents were farmers and most of the people in my family have had some type of garden most of my life.  Many families during the late 50’s and 60’s started to have a 2 person income, and the 70’s brought about the women’s movement, and the days of stay at home mom for many was over. The way we started providing dinners for our family were starting to change also.

The days of the TV dinner had arrived to make things easier for the family on the go. They were developed in 1953 by Swanson’s, but there were earlier reports of others developing them but not really mass producing them for sales across the US. During this time your local grocers were more than likely buying from the local farmer using his/hers produce and eggs, possibly even different types of fresh milk. Things were about to be mass marketed to you and most people did not even realize it, and the majority still do not know where exactly the food they eat comes from. Food companies and manufacturers, and growers were about to be really big business because the average family was too busy to take the time to grow their own food anymore. The average family in the US both adult parents were now working to have double the income. So, no garden in your back yard, or acreage, you were going to have to rely on the local farmer or your local grocery. Many started going to the local grocery to do the one stop shopping for convenience and to save time. This is when the evolution of mass farming, or mass producing of fruits and vegetable sources had to evolve too to meet supply and demand.

There have been many different issues with crops grown in the US, such as drought, and then too much rain, tornadoes and hurricanes and pestilence throughout the US over the past 50+ years. We have used many pesticides to help with different types of bugs that destroy our crops, which in turn have caused problems such as birth defects and other illnesses.  There are companies that have developed new technology to help with many issues that were just stated, and in my opinion they are not taking anyone’s health into account they are trying to make maximum profit. There has been a game changer in my opinion, and the big seed companies have no intention of turning back. It is now all about the profit and mass producing food and they have no concern for the health issues related to it, or the possibilities of future generations of healthy people.  There are companies today that are genetically modifying the food that we eat to make them more drought resistant and more hearty  to resist drought, and to produce more friut or veggies to meet supply and demand. I had not heard about much of this and did not pay much attention to it until I was taking a class in Culinary School and we were learning about GMOs, or “genetically modified organisms, seeds and plants. I was pretty shocked about what I learned and became pretty scared about it at the same time.

GMO’s have been in the American diet for about 20+ years now and I have often wondered about the increase in different health issues like cancer, and diabetes. There have been plants since the beginning of time that have mutated due to pollination or natural selection but what they are doing now is far from that, and not natural, a with new technology sometimes that is not always better! I am one of those people who would like lots of testing and many years of testing before they are putting all of this into the things that are on the shelves in a store near you. You are probably eating GMO stuff and have been for years and do not even know it.  Regardless, I am sure that there are many people who think this is a good thing, and to them it might be. I am one of the people who do not believe that this is a good idea and I am going to tell you my opinion as to why.

One of the biggest seed manufactures in the world is Monsanto Corporation. They are the people who have made Round-Up weed killer, agent orange that was used in Vietnam, aspartame and saccharin that have caused cancer in laboratory rats. Why on earth would we want them to be making our food products? As I said earlier I was watching a video in Culinary School and I was made aware that they had developed a “Suicide Gene” in the seeds they are manufacturing. Farmers have been saving their seeds or “heirloom seeds” for generations and that was a way for them to save money and to make sure that they would be able to reproduce next years crop. Monsanto has created a super DNA type of seed that will not allow it to reproduce and if your crops are in proximity of a Monsanto crop they will cross pollinate and over take your heirloom seeds. The DNA from the seeds of Monsanto are dominant, they could make all other seeds extinct over a period of time no one knows how long but that should be scary enough to make that a non-issue…quit developing plants with the suicide gene makes sense to me they got the seed from someone to modify it should not be theirs to own for all time should it??????

There have been many lawsuits filed by Monsanto when the GMO seed crops have cross pollinated with someone not using the Monsanto seed, and they have had to pay royalties back to Monsanto. I will explain. Say you have 2 wheat farmers within 5-10 miles of each other and they harvest their crops. Both are taking them to the mill to sell their harvests, they will have them tarped off not to lose their valued grains but inevitably you will lose some. It is a windy day and some GMO grain is blown out and onto the farmers land not using the Monsanto GMO seed. The seed is now on the farmers land and will intermingle or cross pollinate with his crop. The farmer unknowingly has the GMO seed and would not use it in the first place more than likely, but will now be held accountable if his crop test positive for having DNA from Monsanto plant. There are people who work for Monsanto who go out and test peoples crops to see if they have any DNA from Monsanto. If they do they bring about a suit or harass the farmer and they win! To me this is absurd. If you can control the food source, you can control the whole planet. This should make you wonder what is really going on. Take a look at the lists of senators on the list of Monsanto that should tell you something. It is BIG business.

I have recently started to try and change the way that I eat my food and I want to know where it comes from. I have started cooking for different people who only wanted organic food used in their cooking. I have been going to farmers markets for quite sometime and the produce is really spectacular and not like what you get in stores, but it is normally very expensive. The reason I have started growing my own is I want to save money, and I actually know where it has been from start to finish. There is really big business in “Organic Foods” and your local grocer will carry them but the cost is great and I worry about whether they really are “Organic”. I like buying local, organic fruits and vegetables because you keep the money in your community, and help the cause of sustainable food. This has became a big passion of mine to make sure that I figure out how to produce some really good fruits and vegetables not only for myself, and my clients, but I want to start helping other achieve the goal of growing organic foods and getting others more involved. I think as we age we gain knowledge and start trying to stave off the aging process, and try to maintain a healthy lifestyle. I for one have started with my food, and food sources. Sour Cream Banana Cake Recipe

This is an old school recipe that I have came across not sure where it originated from it was in my Mamaw Gracie’s collection. I have modified it from the actual recipe I wanted t make a few changes that made it a better cake with a little more moisture in my opinion for a lighter fluffy cake.
Banana Cake
Ingredients:
1/2 Cup of Butter unsalted
1 1/2 Cup of Sugar Granulated
2 Eggs
1 tsp Banana Liqueur or Flavored Extract (If you do not mind the alcohol it will cook out and it is much more flavorful that the extract n my opinion)
1 tsp of Vanilla Bean Paste ( I buy this at Sur le Table or at My Spice Sage on the internet)
2 Cups of Sifted Flour
1 tsp of Baking Powder
1 tsp Baking Soda
1 tsp of salt
1 1/4 Cup of Dairy Sour Cream
1 1/2 Cupsof Ripened Mashed Bananas
1/2 Cup of Roasted Chopped Walnuts
Confectioners Sugar

Directions:
Cream the butter and sugar until fluffy. Add the eggs, vanilla bean paste and banana liqueur and blend thoroughly. Sift together the flour, baking powder, soda and salt. Add alternately with sour cream to creamed butter mixture, beginning and ending with flour. Add banana and nuts, mixing enough to blend. Pour into greased baking loaf pan and bake at 350* for 40-50 minutes. Depending on your oven the time might vary. Cool on rack. Sift Confectioners sugar over the cooled cake for quick topping or add one of your favorites.

Paleo Diet, Will it work for you?

It is very hard to stay on any diet, much less stick to a lifestyle change and daily intake of a healthy foods. Bad foods are like a bad habit, and of course bad habits are very hard to break! The Paleo Diet is called the hunter, or gatherer diet. If the cavemen did not have it available then you should not eat it with this type of diet plan. There are people on different sides of the issue saying that the people from that time did not make it past their 30’s and that the diet was not sustaining so this type of diet is bad for you. However they had no medical treatment and we do not have accurate records from that time to know why the life expectancy was so low during that period. So, this will have to be something you will have to decide for yourself.

In my opinion this would be a great, changing your diet and eating habits to cut out processed foods, refined sugars and all foods that are toxic for your body. If you have a diet that consists of low carbs, healthy fats, lean proteins, nuts and veggies, that seems pretty healthy to me. There were no saturated fats, or processed foods or sugars in that time period and I assume that they were probably healthier for it. I am sure that if we omit those items in most diets today we would see a decrease in type 2 diabetes and other cardiovascular diet related diseases. I am sure that Dr Oz would probably agree on that one….

I am definitely going to do more research on this diet, I have a few clients that are on this diet and they are doing some body sculpting and trying to eat as healthy as possible. I too am going to try this and see if it will help me reduce body fat and hopefully help me out with allergies here in Central Texas. They have been really awful this year and I am wondering if some of that is diet related. I have been drinking tea and using local honey and that has not been very successful so I am willing to try anything at this point.

This diet consists of lean grass fed or wild caught fish or game, brown rice, quinoa and organic vegetables and some nuts, and seeds. I am also using coconut oil, and grape seed oils to cook with. I am going to try and also eat 5-6 times a day to keep my metabolism up and to stave of cravings of foods that would be toxic, like a candy bar, or pizza.
